Peaches and Cream Muffins

Makes 12 muffins

Tired of eating donuts and cookies at every meeting? Whip up a batch of these delicious, low-fat muffins for your next meeting – you just might start a healthy-snacking trend in your workplace!

Ingredients
2¼ cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ cup margarine
3 cups canned sliced peaches (no sugar added), drained and diced
⅓ cup, plus 2 teaspoons sour cream
1 egg, beaten

Method
1.Preheat oven to 400°F. Line twelve, 2 ½ inch muffin pan cups with paper baking cups and set aside.
2.In a medium mixing bowl, combine flour, sugar, baking powder and baking soda. With a pastry blender or two knives, cut in the margarine until the mixture resembles course oatmeal.
3.In a separate mixing bowl combine the remaining ingredients. Add to flour mixture and stir to combine (do not overmix).
4.Fill each baking cup ⅔ full and bake for 15 minutes, until muffins are golden brown and a toothpick inserted in the center comes out dry. Remove muffins to a wire rack and cool.
