Honey-glazed chicken

Makes 4 servings

Ingredients
4 chicken breasts, boned and skinned
1 tsp powdered coriander
1 tsp thyme
1 tsp ground cloves
6 tbsp honey
¾ cup orange juice
4 tbsp grated orange rind
pepper to taste

Method
1.Combine the coriander, thyme and cloves together in a small dish.
2.Rinse chicken and pat dry with towels. Season lightly with pepper. Preheat oven to 375°.
3.Place chicken, meat side down, in a 9 inch x 9 inch baking dish. Pour orange juice into the dish.
4.Brush the chicken with half the honey and sprinkle with half of the combined spices.
5.Bake in oven for approximately 20 minutes. Turn chicken over, meat side up.
6.Brush chicken with remaining half of the honey and sprinkle with remaining spices. Lower heat to 325° and continue baking for 20-25 minutes. Remove from oven and serve on plate.
