Chicken loaf supreme

Ingredients
1 egg
2 egg whites
½ cup plain, low-fat yogurt
2 tbsp. Dijon mustard
½ tsp. salt
½ tsp. pepper
1 stalk celery, finely chopped
¼ cup sweet green pepper, finely chopped
1 medium onion, finely chopped
1 clove garlic, minced
1 tsp. horseradish (not creamed)
2 lbs. ground chicken (white meat only)
1 cup dry bread crumbs

Method
1.Combine all ingredients except chicken and bread crumbs in a large bowl and mix thoroughly.
2.Add half the chicken and half the bread crumbs. Blend this portion well, then add the remaining chicken and crumbs. Blend thoroughly.
3.Place mixture in a non-stick loaf pan, or in a casserole dish sprayed with non-stick cooking spray. Cover loosely with foil and bake at 350° F. for 1 hour.
4.Remove foil and bake another 20 minutes, or until surface is golden brown. Serve hot or cold.
