Brunch Rice Bake

Makes 4 servings

Ingredients
2 cups 1% plain yogurt
½ cup chopped sweet green pepper
½ cup diced cooked chicken
½ cup diced cooked ham
3 tbsp ketchup
½ tsp crushed dried oregano
¼ tsp pepper
2 cups cooked rice
1 cup light ricotta cheese
1 cup bread crumbs
½ grated Parmesan cheese
1 tbsp butter or margarine, melted

Method
1.In a bowl, combine yogurt, green pepper, chicken, ham, ketchup, oregano and pepper; stir in rice.
2.Spoon half of the mixture into greased 6-cup baking dish. Spoon ricotta cheese evenly on top. Top with remaining rice mixture.
3.Combine bread crumbs, cheese and butter; sprinkle over casserole. Bake at 350°F for 25 to 30 minutes or until bubbling and golden brown.
