Beef Fajitas

Makes 3 servings

This family pleaser is a cinch to make. If you have pickled jalapeno peppers on hand, add them to taste instead of red pepper flakes.

Ingredients
6 soft 8 inch (20 cm) flour tortillas
1 tsp vegetable oil
½ lb lean ground beef
1 onion, chopped
1 sweet red or green pepper, cut in thin strips
2 cloves garlic, minced
1 tsp ground coriander
Pinch crushed red pepper flakes
½ cup each shredded lettuce, tomato salsa, low-fat yogurt, low-fat shredded cheese
¼ tsp ground cumin
¼ cup chopped fresh coriander

Method
1.Stack tortillas and wrap in foil; heat in 325 degrees F (160 degrees C) oven for 5 to 10 minutes or until warmed through.
2.Meanwhile, in large nonstick skillet, heat oil over high heat; cook beef and onion, breaking up meat with spoon, for 1 minute.
3.Add red pepper, garlic, ground coriander, cumin and red pepper flakes; cook for 5 minutes or until beef is no longer pink.
4.Spoon mixture evenly onto centre of each tortilla; top with lettuce, salsa, yogurt, cheese and coriander. Roll up.
