This family pleaser is a cinch to make. If you have pickled jalapeno peppers on
hand, add them to taste instead of red pepper flakes.
| 1. | Stack tortillas and wrap in foil;
heat in 325 degrees F (160 degrees C) oven for 5 to 10 minutes or until
warmed through.

| 2. | Meanwhile, in large nonstick skillet,
heat oil over high heat; cook beef and onion, breaking up meat with spoon,
for 1 minute.

| 3. | Add red pepper, garlic, ground
coriander, cumin and red pepper flakes; cook for 5 minutes or until beef is
no longer pink.

| 4. | Spoon mixture evenly onto centre of
each tortilla; top with lettuce, salsa, yogurt, cheese and coriander. Roll
up.
