Vegetable Jubilee

Makes 3 cups (720 mL)

Ingredients
3 cups ripe tomatoes, quartered
⅓ cup carrots
⅓ cup celery with leaves
¼ cup sweet green bell pepper
¼ cup onion
½ clove garlic
1 ½ teaspoons lemon juice
½ teaspoon honey or other sweetener, to taste
salt, pepper or other flavouring agents, to taste

Method
1.Place all ingredients in a blender container in the order listed. Close the lid and blend until smooth.
2.Chill and serve or take to work in a thermos for an instant pick-me-up!
